Always go for x64 if possible, it allow you upgrade RAM high capacity..

Also I'd go with CentOS it is easy to manage and very stable. I really think it is an enterprise level linux, which is free.

if you have more then 2 gb ram then you must go centos 64 bit, also i must say centos 5 is more stable other then 6,
