Anonymous offshore domain registration?

I have been thinking about starting another site, but i would like to know what little details i hand over when i register a domain are safe.

Does anyone know any offshore registrars that will take anonymous forms of payment and not roll over when they get the first e-mail?

i don't get it.
if companies have "rolled over" as you say with first email of dmca, then all the people you are with have sucked lol...

just register with godaddy with fake details?

Just use namecheap or somethin?

Namecheap dont interfere with domains afaik. They aren't responsible for content (like in some other countries) so shouldn't care.
