Connection question
I know this is a silly question but whats the difference between 100 Mbps and 2 x 100Mbps?

It depends on the host.
2 x 100Mbps could mean either 2 separate lines of 100Mbps for the server(s) that you can use simultaneously
Or 1 for upstream, 1 for downstream.
You would be better asking the people of the website(s) you saw that on
