Since the years I've been in the hosting field and learned a lot of commands, I've came to like one particular editor which would be pico and later basically renamed to nano.
The other editor is a 'pain in the ass' and I don't see why people like it.
It's called, vi.
I had to google for the proper commands and just to quit, If I remember it's like :q! or something whereas on nano ctrl+c or when saving it's ctrl+x and y.

Command to install nano on CentOS: yum install nano

Sometimes, I've had to install from source;
cd /usr/src/
wget http://www.nano-editor.org/dist/v2.2/nano-2.2.6.tar.gz
tar -xf nano-2.2.6.tar.gz
cd nano-2.2.6

I use CuteFTP SFTP to edit files
If it has a gui i use it
